An unusual cookery workshop has been taking place in Northfleet – and you could join in this month.
‘How to Prep a Crab’ has attracted budding chefs to join Rosemary Williams to learn how to prepare a crab using her family’s method, created by her grandfather and handed down through the family. She has named it The Holbrook Way – in honour of her family name and has been holding the monthly workshops at Eastgate in Northfleet.
Rosemary is a Kent business coach but after researching her family history, realised that the method is unique and decided to write a book, due out later this month. It will be the first of a series about seafood and how to prepare and cook with it, using her grandfather’s methods. She said: “I had all of this information, this rich family history and thought it had to be written down somewhere, especially the crab method – as I am the only one in the family left who knows it!
“I started the book earlier in the year and people were asking me to show them how to prep a crab, so that’s how the workshops came about and so far, they’ve been popular with home chefs, plus people have been bought a place as a gift by a loved one who knew they would like an extra culinary skill!”
During the workshops, not only does Rosemary tell you about the crab, which meat to choose and how not to smash it up with a hammer, she peppers in wonderful tales of her childhood spent in her grandfather’s fishmonger.
She even lets her workshop participants use his tools – the ones he selected as the best to get into every nook and cranny of the crab!
